- .25 Cups (cu) roasted almonds
- 500 ml artichoke hearts
- .25 Cups (cu) olive oil
- 3 clove garlic
- 1.5 Teaspoons (tsp) lemon juice
- .25 Teaspoons (tsp) salt
- 1 Pounds (lbs) Angel Hair Pasta
- .25 Cups (cu) parmesan, grated
- .25 Teaspoons (tsp) Black Pepper, Ground
Directions
- In the bowl of the food processor, combine the almonds, artichokes, oil, garlic and lemon juice. Pulse to obtain a coarse consistency. Reserve in a large bowl and season to taste.
- In a pot, cook the pasta al dente according to the manufacturer's instructions. Drain without rinsing, place on top of the artichoke pesto and mix with serving utensils.
- Sprinkle with cheese and season with pepper. Serve immediately
