Ingredients
- 2 Pounds (lbs) Roma Tomatos
- 3 Cups (cu) Sugar
- 1 Tablespoons (Tbsp) Lemon Zest
Directions
- Prepare a large pot of boiling water. Meanwhile score the top and bottom of each tomato with a knife in an x.
- Prepare a ice water bath.
- Blanch the tomatoes until the scored skin begins to peel back, about 2 min, and quickly transfer to cold water.
- Peel and core the tomatoes (you can completely de-seed them if you wish)
- In a large pot mix tomatoes, sugar and zest. Bring to a boil and simmer for 3 hours, or until the consistency of a thick jam, skim surface regularly during this time.
